Tuna with tomato onions

Cooking recipe to prepare, step by step, traditional and homemade onioned tuna.If necessary, we will remove the skin and thorns. If you have already done this work for us in the fish market, so much the better.
  • Respect to the presentation of the fish, there are two schools: the one that conserves the complete fillets, and the one that cuts them in big cubes (each as for a bite). This is up to the choice of each cook. In either case, we will salt the tuna, and arrange it in a container where we can marinate it briefly with white wine.
  • We will arrange the fish and wine so that the first one can absorb the liquid. We will keep it in the refrigerator for a few minutes, while we advance other stages of the recipe.
  • Then we will peel and chop the onions in julienne. We will also peel the garlic cloves and chop them into slices, as thin as possible.
  • In the case of peppers, we will wash and remove certain parts of the vegetable: the seeds, the white interior, the branch. Then we will cut them into tapes, along (juliana).
  • In a pan Large enough, heat a little oil, to fry the onion and garlic. We will keep the fire between medium and low, to avoid that our vegetables are passed. We will also stir frequently. The objective is for the onion to begin to become slightly transparent.
  • We will add to the cooking the pepper ribbons, and pour the remaining half glass of wine. Let it cook for 3 more minutes.
  • Then we will take the fish out of the refrigerator and we will incorporate it. We will make it cook very briefly so that it takes a little color, on both sides.
  • Then we will add the tomato sauce.
  • We will also incorporate the bay leaf, and cover the pan to leave everything cooking for ten minutes (15, if you have not cut the tuna cubes). Preferably, it is advisable not to stray too far from the kitchen, and supervise the cooking from time to time. Even, it's a good idea to stir it up a bit.
  • After the cooking time, we will remove top, and add the minced parsley and sweet pepper to the sauce.
  • We will revolve everything and test the result. You may have to correct the seasoning with more salt and pepper.
  • Tips for a yummy onioned tuna

    • For an even more tasty sauce, a spoonful of oregano powder can also be added.
    • In the traditional tuna-on-white recipe, the fish does not marinate with the powder. The most purists can skip this step. However, doing so gives the tuna of this recipe an additional delicious taste.
    • If the sauce is too thick for the cook's taste, a little water can be added to dilute it.However, stay away from the heat so it does not overcook.
    • When serving, make sure the tuna is hot. It is recommended to accompany this dish with a good dry white wine, in harmony with the one used for the preparation.

With which to accompany the tuna with onions

As a garnish, you can use white rice that will go well with the sauce, or some slice of homemade bread.

It is also good if served with a creamy mashed potatoes or baked potatoes.
